Prepare the Slaw
In a large bowl, combine the red cabbage, parsley, and coriander. In a small bowl, mix the mayonnaise, lemon juice, salt, and pepper. Pour the dressing over the slaw and toss until well coated. Set aside.

Blacken the Fish
Pat the redfish fillets dry with paper towels. Rub each fillet with olive oil and coat generously with blackening seasoning. Heat a skillet over medium-high heat and add the seasoned fillets. Cook for about 3-4 minutes on each side until the fish is cooked through and has a charred crust.

Prepare the Aioli
In a small bowl, mix mayonnaise with the juice of half a lemon and a pinch of salt. Adjust seasoning as needed.

Assemble the Sandwich
To assemble, spread lemon aioli on the bottom half of the brioche bun. Place a blackened redfish fillet on top, followed by a slice of tomato and a generous portion of slaw. Top with the other half of the bun.

Serve the sandwich with house-cut fries on the side.
