    Prepare the Fries

    Preheat your oven to 425°F (220°C). Cut the Russet potatoes into thin fry shapes and toss them in olive oil, salt, and black pepper. Spread them evenly on a baking sheet and bake for 30-35 minutes, flipping halfway through, until crispy and golden.

    Make the Mushroom Gravy

    In a large skillet, melt the butter over medium heat. Add the sliced mushrooms and garlic, cooking until the mushrooms are browned and tender, about 5-7 minutes. Sprinkle the flour over the mushrooms, stirring to combine, and cook for an additional minute.

    Combine for Gravy

    Slowly add the beef broth to the skillet, stirring constantly to avoid lumps. Bring the mixture to a simmer and cook until thickened, about 5-10 minutes. Season with salt and pepper to taste.

    Assemble the Dish

    Once the fries are done, remove them from the oven and place them on a serving platter. Top the fries generously with the mushroom gravy and sprinkle with Maytag blue cheese and chopped parsley.
