    Prepare the Prime Rib

    Preheat your oven to 450°F (232°C). Rub the prime rib roast with olive oil, then season generously with kosher salt, black pepper, garlic powder, and chopped rosemary.

    Roast the Meat

    Place the seasoned prime rib on a roasting pan, bone side down. Roast in the preheated oven for 20 minutes. Reduce the oven temperature to 325°F (163°C) and continue roasting for about 1.5 to 2 hours, or until the internal temperature reaches your desired doneness (125°F for rare, 135°F for medium-rare).

    Rest the Roast

    Remove the prime rib from the oven and cover loosely with aluminum foil. Let it rest for 20-30 minutes before slicing. This allows the juices to redistribute.

    Make the Au Jus

    While the prime rib is resting, pour the drippings from the roasting pan into a saucepan. Add the beef broth and bring to a simmer over medium heat. Allow it to reduce slightly, then strain if desired.

    Slice the prime rib and serve with the au jus and prepared horseradish on the side.
