Prepare the Pork Skin
Cut the pork skin into 1-inch squares. Make sure to remove any excess fat.

Fry the Pork Rinds
In a large pot, heat the vegetable oil over medium-high heat. Once hot, carefully add the pork skin pieces in batches, frying until they puff up and become crispy, about 2-3 minutes. Remove with a slotted spoon and drain on paper towels.

Season the Rinds
While the rinds are still warm, sprinkle them with salt.

Melt the Cheese
In a small saucepan, melt the white cheddar and gruyère cheese together over low heat until smooth, stirring frequently.

Serve
Serve the crispy pork rinds warm, drizzled with the melted cheese mixture. Enjoy with comeback sauce on the side.
