Prepare the Pork Chops
Season the pork chops with salt and black pepper on both sides.

Sear the Pork Chops
In a large skillet, heat the olive oil over medium-high heat. Add the pork chops and sear for about 4-5 minutes on each side until they are golden brown and cooked through. Remove from the skillet and set aside.

Make the Sauce
In the same skillet, add the butter and let it melt. Stir in the green peppercorns and cook for 1-2 minutes. Carefully pour in the cognac and let it reduce for about 2-3 minutes.

Finish the Sauce
Add the heavy cream to the skillet and stir well. Let the sauce simmer for another 3-5 minutes until it thickens slightly. Adjust seasoning with salt and pepper to taste.

Serve
Return the pork chops to the skillet, coating them with the sauce. Serve hot, drizzled with the cognac and green peppercorn sauce.
