Mussels and Broth

Method

Preparation

  1. 1

    Clean the Mussels

Rinse the PEI mussels under cold running water, scrubbing the shells to remove any debris. Discard any mussels that are open and do not close when tapped.

  2. 2

    Cook the Aromatics

In a large pot, heat the olive oil over medium heat. Add the minced garlic and chopped shallots, sautéing until fragrant and translucent, about 3-4 minutes.

  3. 3

    Add Tomatoes and Broth

Stir in the canned diced tomatoes (with juices), vegetable broth, red pepper flakes, salt, and black pepper. Bring to a simmer and let cook for about 5 minutes.

  4. 4

    Add Mussels

Add the cleaned mussels to the pot, cover, and cook for 5-7 minutes or until the mussels have opened. Discard any mussels that remain closed.

  5. 5

    Finish with Basil

Stir in the chopped fresh basil and give it a gentle mix. Remove from heat.

  6. 6

    Toast the Baguette

While the mussels are cooking, slice the baguette and toast it in the oven or on a skillet until golden brown.

  7. 7

    Serve

Serve the mussels in a bowl with the broth and toasted baguette on the side for dipping.
