    Prepare the Pecan Butter Crunch

    Preheat the oven to 350°F (175°C). In a large bowl, cream together the unsalted butter, brown sugar, and granulated sugar until smooth. Stir in the vanilla extract.

    In another bowl, combine the chopped pecans, all-purpose flour, cinnamon, and salt. Gradually add the dry ingredients to the butter mixture, mixing until just combined.

    Spread the mixture evenly into a greased 9x13 inch baking dish. Bake for 20-25 minutes or until golden brown and set. Allow to cool completely.

    Prepare the Cinnamon Granny Smith Apple Glaze

    While the butter crunch is cooling, peel and slice 2 Granny Smith apples. In a skillet, melt 2 tablespoons of unsalted butter over medium heat and add the sliced apples.

    Sprinkle with cinnamon and cook for 5-7 minutes until the apples are tender. Add 1/4 cup of brown sugar and stir until melted and syrupy. Cook for an additional 2 minutes.

    Once the pecan butter crunch has cooled, cut it into squares and top each piece with a scoop of vanilla bean ice cream and drizzle with the warm cinnamon Granny Smith apple glaze.
