Prepare the Tomatoes
Slice the green tomatoes into 1/4 inch thick slices. Sprinkle with salt and let them sit for about 10 minutes to draw out moisture.

Set Up the Breading Station
In one bowl, combine the flour, salt, black pepper, and cayenne pepper. In the second bowl, pour the buttermilk. In the third bowl, place the cornmeal.

Bread the Tomatoes
Dredge each tomato slice in the flour mixture, then dip it in the buttermilk, and finally coat it in cornmeal.

Fry the Tomatoes
In a large skillet, heat vegetable oil over medium heat. Fry the breaded tomato slices for about 3-4 minutes on each side or until golden brown. Drain on paper towels.
