    Prepare the Catfish

    Soak the catfish fillets in buttermilk for at least 30 minutes in the refrigerator.

    Mix the Coating

    In a large bowl, combine cornmeal, flour, cayenne pepper, salt, and black pepper.

    Coat the Catfish

    Remove catfish from buttermilk, allowing excess to drip off. Dredge each fillet in the cornmeal mixture until evenly coated.

    Heat the Oil

    In a deep skillet or fryer, heat vegetable oil to 350°F (175°C).

    Fry the Catfish

    Carefully add the coated catfish fillets to the hot oil, frying in batches if necessary. Cook for 4-5 minutes per side, or until golden brown and crispy.

    Drain and Serve

    Remove the fried catfish from the oil and place on a paper towel-lined plate to drain excess oil. Serve hot with your choice of two sides.
