    Prepare the Crab Cakes

    In a bowl, combine crab meat, breadcrumbs, mayonnaise, Dijon mustard, egg, Old Bay seasoning, salt, and black pepper. Mix gently until combined.

    Form and Cook the Crab Cakes

    Shape the mixture into small patties. Heat olive oil in a skillet over medium heat. Cook the crab cakes for about 4-5 minutes on each side until golden brown. Remove and keep warm.

    Poach the Eggs

    Bring a pot of water to a simmer. Crack each egg into a small bowl, then gently slide into the water. Poach for about 3-4 minutes until the whites are set but the yolks are still runny. Remove with a slotted spoon.

    Make the Hollandaise Sauce

    In a heatproof bowl, whisk together egg yolks and lemon juice. Place over a pot of simmering water and whisk until the mixture thickens. Slowly drizzle in melted butter while whisking continuously. Season with salt and cayenne pepper to taste.

    Assemble the Dish

    Toast the English muffins and place one crab cake on each half. Top with a poached egg and drizzle with hollandaise sauce. Serve with your choice of fruit.
