Prepare the Hollandaise Sauce
In a double boiler or a heatproof bowl over simmering water, whisk together the egg yolks and lemon juice until thickened. Gradually whisk in the melted butter until the sauce is smooth. Season with salt and a pinch of cayenne pepper. Keep warm.

Poach the Eggs
Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the simmering water. Poach the eggs for about 3-4 minutes, until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside on a paper towel.

Toast the English Muffins
Split the English muffins in half and toast them until golden brown.

Cook the Canadian Bacon
In a skillet over medium heat, cook the Canadian bacon until warmed through and slightly crispy, about 2-3 minutes per side.

Make the Onion Strings
Slice the onion into thin rings. Dip the rings in flour and fry in hot oil until golden brown and crispy. Drain on paper towels.
