Ingredients for Classic Eggs Benedict

Method

Directions for Classic Eggs Benedict

  1. 1

    Prepare the Hollandaise Sauce

In a double boiler or a heatproof bowl over simmering water, whisk together the egg yolks and lemon juice until thickened. Gradually whisk in the melted butter until the sauce is smooth. Season with salt and a pinch of cayenne pepper. Keep warm.

  2. 2

    Poach the Eggs

Bring a pot of water to a gentle simmer. Crack each egg into a small bowl, then gently slide into the simmering water. Poach the eggs for about 3-4 minutes, until the whites are set but the yolks remain runny. Remove with a slotted spoon and set aside on a paper towel.

  3. 3

    Toast the English Muffins

Split the English muffins in half and toast them until golden brown.

  4. 4

    Cook the Canadian Bacon

In a skillet over medium heat, cook the Canadian bacon until warmed through and slightly crispy, about 2-3 minutes per side.

  5. 5

    Make the Onion Strings

Slice the onion into thin rings. Dip the rings in flour and fry in hot oil until golden brown and crispy. Drain on paper towels.

  6. 6

    Assemble the Dish

On each toasted English muffin half, layer the Canadian bacon, followed by a poached egg. Drizzle with hollandaise sauce and serve with crispy onion strings on the side.
