In a bowl, soak the chicken breast fillets in buttermilk for at least 30 minutes to tenderize and flavor the meat.

Make the Breading
In a separate bowl, combine flour, cornstarch, paprika, garlic powder, onion powder, salt, and black pepper.

Heat the Oil
In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

Coat and Fry the Chicken
Remove chicken from buttermilk, letting excess drip off. Dredge in the flour mixture, pressing lightly to adhere. Fry chicken tenders in batches for 3-4 minutes or until golden brown and cooked through. Drain on paper towels.
