    Prepare the Brisket

    Preheat your oven to 300°F (150°C). In a small bowl, mix together salt, black pepper, garlic powder, onion powder, and smoked paprika to create a dry rub. Rub this mixture all over the brisket.

    Sear the Brisket

    In a large oven-proof pot or Dutch oven, heat olive oil over medium-high heat. Once hot, sear the brisket on all sides until browned, about 4-5 minutes per side.

    Add Liquid and Herbs

    Remove the brisket from the pot and set aside. Pour in the beef broth and Worcestershire sauce, scraping any browned bits from the bottom of the pot. Add the bay leaves.

    Slow Cook the Brisket

    Return the brisket to the pot, cover it, and transfer it to the preheated oven. Cook for 4-5 hours, or until the brisket is fork-tender.

    Rest and Serve

    Once cooked, remove the pot from the oven and let the brisket rest for at least 20 minutes before slicing. Serve with your choice of two sides.
