Preheat and prepare
Preheat the oven to 220°C (425°F). Line a large baking sheet with parchment paper. Position the oven rack in the upper-middle so fries get crisp edges.

Wash and cut sweet potatoes
Wash and scrub the 2 medium sweet potatoes well. Peel if desired. Cut each potato into uniform fries about 1/2-inch (1.2 cm) thick — aim for even size so they cook evenly. Pat the cut fries very dry with clean kitchen towels or paper towels to remove surface moisture.

Coat with cornstarch
Place the dried sweet potato fries into a large bowl. Sprinkle 1 teaspoon cornstarch over them and toss thoroughly so the cornstarch lightly coats each fry. The cornstarch helps create a crisper exterior.

Season and oil
Add 2 tablespoons olive oil to the bowl with the coated fries and toss to evenly distribute. Sprinkle 1 teaspoon smoked paprika, 1 teaspoon garlic powder, 1 teaspoon salt, and 1 teaspoon black pepper over the fries and toss again until all pieces are evenly seasoned and lightly shiny from the oil.

Arrange on baking sheet
Spread the fries in a single layer on the prepared baking sheet, leaving space between fries — do not overcrowd. Use two sheets and bake in batches if necessary to avoid steaming. For extra crispiness, place fries cut-side down when possible.

Bake and flip
Bake in the preheated oven for 12 minutes. After 12 minutes, use a spatula to flip each fry so the other side can crisp. Return to the oven and bake an additional 8–12 minutes, watching closely the last few minutes so they reach deep golden brown edges without burning. Total bake time will be about 20–24 minutes depending on thickness and oven.

Optional broil for extra crisp
If you want extra crispness, switch the oven to broil for 1–2 minutes after baking — keep the oven door slightly open and watch constantly to prevent burning.

Finish and serve
Remove fries from the oven and immediately sprinkle with a pinch more salt if desired. Transfer to a serving bowl or platter, garnish with 1 tablespoon chopped fresh parsley (optional) and serve with lime wedges (optional) or your favorite dipping sauce.
