Glass & Garnish

Method

Glass & Garnish

  1. 1

    Prepare glass

Chill the champagne flute in the refrigerator for at least 15 minutes or rest it briefly in a bowl of ice water for 2–3 minutes. Dry the rim quickly if water beads remain.

  2. 2

    Garnish

If using an orange twist: use a vegetable peeler to remove a 1/2-inch wide strip of zest, twist it over the glass to express oils, then drop or rest it on the rim. If using a strawberry: slice and place it on the rim.

Cocktail

  1. 3

    Measure

Measure 3 oz (about equal parts with sparkling wine) of freshly squeezed orange juice and 3 oz of chilled Champagne or dry sparkling wine. If making multiple servings, maintain a 1:1 ratio by volume (or use 1 part OJ to 1 part sparkling wine).

  2. 4

    Optional: remove pulp

If you prefer a smoother drink, strain the freshly squeezed orange juice through a fine mesh strainer to remove pulp and seeds into a chilled measuring cup.

  3. 5

    Pour

Pour the orange juice into the chilled flute first. This helps control foam. Then slowly tilt the glass slightly and gently pour the chilled Champagne down the side to preserve bubbles and reduce overflow.

  4. 6

    Finish

Give the flute a gentle swirl once or twice to integrate without losing carbonation. Add the prepared orange twist or strawberry on the rim as garnish.

  5. 7

    Serve

Serve immediately while cold and bubbly. For multiple glasses, prepare orange juice in a chilled pitcher and open the bottles of sparkling wine just before pouring to retain effervescence.
