Coffee Base

Method

Coffee Base

  1. 1

    Measure and grind

Measure 0.08 cups (about 14–16 g) of whole coffee beans per 8-ounce serving (adjust proportionally for multiple servings). Grind to a medium-fine setting (slightly finer than drip) to maximize extraction for the charred flavor integration.

  2. 2

    Brew

Bring 8 cups of filtered water to just below boiling (about 200°F / 93°C). Brew the ground coffee using a pour-over, AeroPress, or French press to produce approximately 8 fluid ounces of strong coffee. Aim for a brewing time of 3–4 minutes (French press) or pour-over technique for even extraction. Set brewed coffee aside and keep it hot.

Charred Aromatics & Syrup

  1. 3

Char the orange peel and spices

Using a gas burner, kitchen torch, or hot skillet, char one large strip of orange peel until the outer surface is deeply browned and slightly blackened (do not burn to ash). Similarly, briefly toast the cinnamon stick and star anise over the flame until aromatic and slightly darkened (20–40 seconds), rotating to avoid flame flare-ups. The goal is intense, smoky citrus and spice notes.

  2. 4

    Make charred orange spice syrup

In a small saucepan, combine 0.25 cups granulated sugar and 0.25 cups filtered water. Add the charred orange peel, charred cinnamon stick, and charred star anise. Bring to a gentle simmer over medium-low heat and stir until sugar dissolves. Reduce heat and simmer for 6–8 minutes to infuse the syrup with charred aromatics. Remove from heat and let steep 10 minutes for stronger flavor. Strain out solids through a fine mesh strainer into a clean container. Reserve the syrup; it should yield roughly 3–4 tablespoons.

Finishing & Garnish

  1. 5

    Assemble coffee

Pour the freshly brewed hot coffee into a warmed serving cup (8 fl oz). Add 1 tablespoon of the charred orange spice syrup and stir. Taste and add a second tablespoon if you prefer sweeter, more pronounced charred-citrus notes.

  2. 6

    Optional richness

If desired, swirl in 1/4 tablespoon unsalted butter for a silky mouthfeel and an additional layer of flavor. This is optional and recommended only if you want a richer texture.

  3. 7

    Finish and garnish

Lightly express the oils of the reserved orange peel garnish by holding it over the cup and giving it a quick twist to release aromatic oils, then run it along the cup rim and drop it into the beverage. Sprinkle a small pinch of coarse sea salt on top to heighten flavors. Serve immediately while hot.
