Method
Cocktail
- 1
Prepare base
Chill a coupe or martini glass in the freezer for a few minutes. Measure the gin, elderflower liqueur, fresh lemon juice, simple syrup and egg white (or aquafaba) into a cocktail shaker without ice.
- 2
Dry shake
Seal the shaker and dry-shake vigorously for 15–20 seconds. This emulsifies the egg white and creates a froth that will become the 'starry' top.
- 3
Wet shake
Open the shaker, add ice, then shake again hard for 10–12 seconds to chill and dilute the mixture.
- 4
Strain and layer
Double-strain the cocktail into the chilled coupe to remove ice chips and achieve a smooth texture.
- 5
Add color accent
Carefully pour the blue curaçao over the back of a bar spoon held just above the foam so it sinks slightly and creates a subtle starry-blue halo near the top. Use very small amounts — 0.25 oz — to avoid overpowering flavor.
- 6
Top with bubbles
Gently top the drink with the chilled sparkling wine (about 2 oz) poured slowly down the side of the glass so it integrates without collapsing the foam completely.
Garnish
- 7
Sprinkle a very small pinch of edible silver star sprinkles or a light dusting of silver luster dust across the foam to evoke stars. Twist a lemon peel over the drink to release oils, run it around the rim, then drop the twist onto the foam as a finishing accent.
