Brew Coffee

Heat water
Measure 12 fl oz (about 355 ml) of fresh cold water. Heat until just below boiling, around 195–205°F (90–96°C). If you don’t have a thermometer, bring to a boil and let rest 30 seconds.

Measure coffee
Measure 2 tablespoons of freshly ground coffee (medium grind) per 12 fl oz of water. Place coffee into your chosen brewing device (drip cone, French press, pour-over, AeroPress, or coffee maker).

Brew
Pour the hot water evenly over the grounds, saturating them completely. If using pour-over, pour slowly in circles until all water has passed through (about 2:30–3:30 minutes). If using French press, pour, stir gently, steep 4 minutes, then press. If using a drip machine, start the brew cycle. If using AeroPress, follow manufacturer’s timing for your chosen recipe.

Serve
When brewing is complete, immediately pour the brewed coffee into a pre-warmed mug to preserve temperature and avoid over-extraction from grounds left in contact with liquid.
