    Preheat and prepare

    Place a pizza stone or baking sheet in the oven and preheat to 500°F (260°C) for at least 30 minutes. If your oven does not reach 500°F, preheat to the highest temperature available. Lightly dust a work surface with 1 tablespoon flour.

    On the floured surface, stretch or roll the pizza dough into a 10–12 inch round (for one medium pizza). If dough resists, let it rest 5–10 minutes and continue. Transfer the shaped dough to a piece of parchment paper or a well-floured pizza peel.

    Brush the dough edge lightly with 1 tablespoon olive oil to promote browning of the crust.

Sauce

    In a small bowl combine 3 tablespoons tomato sauce, 1 teaspoon minced garlic, 1 teaspoon dried oregano, 1 teaspoon salt, and 1 teaspoon black pepper. Stir until evenly mixed.

    Spread the seasoned tomato sauce evenly over the stretched dough, leaving a 1/2 inch border for the crust. Use the back of a spoon to get a thin, even layer — about 2–3 tablespoons of sauce across the surface.

    Arrange the provolone (3 oz) in a single even layer over the sauced dough. The provolone adds a sharp, slightly smoky base layer.

    Distribute the mozzarella (6 oz) evenly over the provolone. If using fresh mozzarella, pat it dry first to reduce excess moisture and tear or slice into pieces for even coverage.

    Sprinkle the grated parmesan (1 oz) evenly over the top to provide salty, nutty finish and help with browning.

Baking & finishing

    Carefully slide the pizza (on the parchment) onto the preheated stone or baking sheet. Bake at 500°F (260°C) for 8–12 minutes, or until the crust is golden and cheese is bubbly and starting to brown. Oven times vary—check at 8 minutes and continue until desired doneness.

    If you prefer extra browning on the cheese, switch the oven to broil for the last 1–2 minutes while watching closely to avoid burning.

    Remove pizza from oven and transfer to a cutting board. Let rest 2–3 minutes to set the cheese.

    Garnish with fresh basil leaves (6 whole) and a light sprinkle of crushed red pepper flakes (1 teaspoon) if desired. Slice into 6–8 pieces and serve hot.
