Prepare the Beef
In a large skillet, heat olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.

Cook the Ground Beef
Add the ground beef to the skillet. Cook until browned, breaking it apart with a spatula. Drain excess fat if necessary.

Season the Beef
Stir in the taco seasoning, salt, and black pepper. Add the canned black beans (drained and rinsed) and mix well. Cook for an additional 5 minutes until heated through.

Assemble the Nachos
On a large baking sheet, spread the nacho chips evenly. Top with the beef and bean mixture, then sprinkle the shredded cheddar cheese on top.

Bake the Nachos
Preheat the oven to 180°C (350°F). Bake the nachos for about 10 minutes, or until the cheese is melted and bubbly.

Serve
Remove from the oven and top with sliced jalapeños, sour cream, and chopped cilantro as desired. Serve immediately.
