    Prepare the Tortillas

    In a skillet, heat olive oil over medium heat. Lightly fry each corn tortilla for about 30 seconds on each side until soft. Remove from heat and set aside.

    Fill the Tortillas

    Take one tortilla and fill it with a mixture of either shredded chicken, ground beef, or cheese. Roll it up and place it seam-side down in a baking dish. Repeat for all tortillas.

    Add Sauce and Cheese

    Pour the enchilada sauce over the rolled tortillas in the baking dish. Sprinkle the shredded cheese evenly on top.

    Bake the Enchiladas

    Preheat your oven to 350°F (175°C). Bake the enchiladas for 20-25 minutes or until the cheese is melted and bubbly.

    Serve

    Remove from the oven and let cool for a few minutes. Serve topped with sour cream and chopped cilantro.
