Preparation
1. Prepare the Filling
In a skillet, heat olive oil over medium heat. Add chopped onion and sauté until translucent. Add grilled chicken or steak and sauté for 3-4 minutes. Season with salt and black pepper. Remove from heat.
2. Assemble the Enchiladas
Preheat the oven to 350°F (175°C). Take a corn tortilla, fill it with about 1/3 cup of the meat mixture, and roll it tightly. Place the rolled enchilada seam-side down in a baking dish. Repeat with the remaining tortillas.
3. Add Sauce and Cheese
Pour the red enchilada sauce evenly over the enchiladas, then sprinkle the shredded cheese on top.
4. Bake
Cover the baking dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
5. Serve
Remove from the oven, let cool slightly, and garnish with sour cream and chopped cilantro before serving.
