Cooking Instructions

  1. 1

    Prepare the Beans

Soak the pinto beans in water overnight. Drain and rinse before cooking.

  2. 2

    Cook the Bacon and Sausage

In a large pot, cook the bacon over medium heat until crispy. Remove and set aside. In the same pot, add the sausage and cook until browned.

  3. 3

    Sauté Vegetables

Add the diced onion, garlic, green bell pepper, and jalapeño to the pot. Sauté until the vegetables are tender.

  4. 4

    Add Remaining Ingredients

Stir in the diced tomatoes, soaked beans, chicken broth, salt, and black pepper. Bring to a boil.

  5. 5

    Simmer the Soup

Reduce heat and let the soup simmer for about 1 to 1.5 hours, or until the beans are tender.

  6. 6

    Finish the Soup

Add the chicharron and cooked bacon back into the pot. Adjust seasoning if necessary.

  7. 7

    Serve

Ladle the soup into bowls, garnish with chopped cilantro, and serve with lime wedges on the side.
