    Prepare the Filling

    In a skillet, heat olive oil over medium heat. Add diced onion and sauté until translucent. Stir in shredded beef or pork carnitas and season with salt and pepper. Cook for about 5 minutes until heated through.

    Prepare the Tortillas

    In a separate pan, lightly warm the corn tortillas to make them pliable. You can do this by heating them on a skillet for about 30 seconds on each side.

    Assemble the Enchiladas

    Take a warmed tortilla, add a few spoonfuls of the meat mixture, and roll it up tightly. Place the rolled enchilada seam-side down in a greased baking dish. Repeat with remaining tortillas and filling.

    Add Sauce and Cheese

    Pour the green enchilada sauce over the assembled enchiladas, making sure to cover them evenly. Sprinkle shredded cheese on top.

    Bake

    Preheat the oven to 350°F (175°C). Bake the enchiladas for about 20 minutes or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, let cool for a few minutes, then serve with sour cream and chopped cilantro on top.
