    Prepare the Filling

    In a pan, heat olive oil over medium heat. Add the shredded chicken and beef. Season with salt and pepper. Stir until heated through. Remove from heat and set aside.

    Prepare the Tortillas

    In a separate skillet, warm the corn tortillas one by one until pliable. This will make them easier to roll.

    Assemble the Enchiladas

    Take a warm tortilla, add a portion of the chicken, beef, or cheese in the center. Roll the tortilla tightly and place it seam-side down in a baking dish. Repeat with the remaining tortillas.

    Add Sauce and Cheese

    Once all enchiladas are in the baking dish, pour the red enchilada sauce evenly over the top. Sprinkle the shredded cheese over the sauce.

    Bake

    Preheat the oven to 375°F (190°C). Bake the enchiladas for 20-25 minutes or until the cheese is melted and bubbly.

    Serve

    Remove from the oven, garnish with sour cream and chopped cilantro. Serve hot.
