Prepare the Filling
In a large bowl, combine the shredded beef or pork carnitas with salt and pepper to taste. Mix well.

Warm the Tortillas
In a skillet over medium heat, warm the flour tortillas for about 30 seconds on each side until pliable.

Assemble the Burritos
Place a generous portion of the meat filling in the center of each tortilla. Add Spanish rice, beans, shredded lettuce, and pico de gallo on top.

Roll the Burritos
Fold in the sides of the tortilla and then roll from the bottom up to enclose the filling. Repeat for each tortilla.

Top with Sauce and Cheese
Place the rolled burritos in a baking dish. Pour tomatillo green sauce over the top and sprinkle with shredded cheese.

Bake
Preheat the oven to 350°F (175°C) and bake the burritos for 15-20 minutes until the cheese is melted and bubbly.

Serve
Remove from the oven and serve hot with sour cream on the side.
