Directions

  1. 1

    Prepare the Ingredients

Begin by marinating the steak with olive oil, cumin, paprika, salt, and pepper. Let it rest for at least 30 minutes.

  2. 2

    Cook the Chorizo

In a skillet over medium heat, cook the chorizo until browned and cooked through. Remove from heat and set aside.

  3. 3

    Grill the Steak

In the same skillet or on a grill, cook the marinated steak for about 6-8 minutes per side, or until it reaches desired doneness. Let it rest for a few minutes before slicing it into thin strips.

  4. 4

    Prepare the Rice and Beans

Cook the Spanish rice according to package instructions. Once cooked, stir in the black beans and heat through.

  5. 5

    Assemble the Burrito

Lay a tortilla flat and add a portion of Spanish rice and beans, followed by sliced steak, cooked chorizo, shredded cheese, diced tomatoes, and lettuce. Roll the tortilla tightly to form a burrito.

  6. 6

    Crisp the Burrito

Heat a non-stick skillet over medium heat. Place the burrito seam-side down and cook until golden brown and crispy, about 2-3 minutes on each side.

  7. 7

    Serve

Serve the Burrito Grande with a side of guacamole and a fresh salad of lettuce and diced tomatoes.
