Mix Dry Ingredients
In a large mixing bowl, combine the all-purpose flour, baking powder, baking soda, salt, and sugar. Whisk together until evenly mixed.

Mix Wet Ingredients
In a separate mixing bowl, whisk together the buttermilk, egg, melted unsalted butter, and vanilla extract until well combined.
Cooking

Combine Ingredients
Pour the wet ingredients into the bowl with the dry ingredients. Gently mix with a spatula until just combined. Do not overmix; some lumps are fine.

Preheat Pan
Heat a non-stick skillet or griddle over medium heat. Lightly grease with butter or cooking spray.

Cook Pancakes
For each pancake, pour about 1/3 cup of batter onto the skillet. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes. Flip and cook for another 1-2 minutes until golden brown.

Remove pancakes from the skillet and serve immediately with your choice of syrup, fruit, or toppings.
