    Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Do not overwork the dough.

    Divide the dough into two equal parts, shape them into discs, wrap in plastic wrap, and refrigerate for at least 1 hour.

Filling

    Prepare the Filling

    In a large mixing bowl, combine the sliced strawberries, chopped rhubarb, sugar, cornstarch, lemon juice, and cinnamon. Stir well to coat the fruit evenly.

    Allow the mixture to sit for about 15 minutes to let the juices flow.

Assembly and Baking

    Preheat your oven to 425°F (220°C).
