    Prepare the Vegetables

    Dice the bell onions and tomatoes. Slice the jalapenos into thin rounds, removing the seeds if you prefer less heat.

    Prepare the Protein

    If using chicken or beef, ensure it's cooked and shredded or diced into bite-sized pieces.

Cooking

    Heat the Pan

    In a large skillet, heat 1 tablespoon of olive oil over medium heat.

    Assemble the Quesadilla

    Place one flour tortilla in the skillet. Sprinkle 1/2 cup of cheddar cheese on one half of the tortilla. Add 1/2 cup of the cooked protein, followed by the diced onions, tomatoes, and jalapenos. Top with another 1/2 cup of cheddar cheese and fold the tortilla over.

    Cook the Quesadilla

    Cook for about 3-4 minutes on one side, until the cheese is melted and the tortilla is golden brown. Carefully flip the quesadilla and add the remaining tablespoon of olive oil to the skillet. Cook for an additional 3-4 minutes until the second side is golden brown.

    Repeat

    Repeat the process with the remaining tortillas and filling.

Serving

    Slice and Serve

    Remove the quesadillas from the skillet, let them cool for a minute, then slice into wedges. Serve warm with salsa or sour cream on the side if desired.
