Pork Tenderloin Preparation

    Prepare the Pork

    Trim any excess fat from the pork tenderloin and slice it into 1-inch thick medallions.

    Bread the Pork

    Set up a breading station: Place flour in one bowl, beaten eggs in another, and breadcrumbs mixed with salt, pepper, and garlic powder in a third bowl. Dip each pork medallion first in flour, then in egg, and finally coat with breadcrumbs.

    Fry the Pork

    Heat oil in a large skillet over medium-high heat. Once hot, add the breaded pork medallions in batches. Fry for 4-5 minutes on each side until golden brown and cooked through. Remove and drain on paper towels.

    Prepare the Buns

    While the pork is frying, slice the hamburger buns in half and lightly toast them on a grill or skillet until golden brown.

    Assemble the Sandwiches

    Spread mayonnaise on the bottom half of each toasted bun. Place a piece of fried pork tenderloin on top, followed by a layer of lettuce and slices of tomato. Top with the other half of the bun.

    Serve the sandwiches immediately while hot, with additional mayo on the side if desired.
