Broth Preparation

    Prepare the Broth

    In a large pot, add the pork bones and cover them with water. Bring to a boil over high heat.

    Simmer the Broth

    Once boiling, reduce the heat to low and simmer for about 4 hours, skimming any foam that rises to the top.

    Add Flavors

    After 4 hours, add the soy sauce, mirin, ginger, garlic, and green onions. Continue to simmer for another 1 hour.

    Strain the Broth

    Once the broth is ready, strain it through a fine mesh sieve to remove the solids, and keep it warm.

Noodles and Toppings Preparation

    In a separate pot, bring water to a boil. Add the ramen noodles and cook according to package instructions until al dente. Drain and set aside.

    In a skillet, cook the sliced pork belly over medium heat until crispy and browned. Remove and drain on paper towels.
