Jalapeno Preparation

Prepare the Jalapenos
Preheat your oven to 375°F (190°C). Slice the jalapenos in half lengthwise and remove the seeds and membranes for less heat (or leave some seeds for more heat).

Make the Filling
In a mixing bowl, combine the cream cheese, chili powder, garlic powder, onion powder, salt, and black pepper. Mix until smooth and creamy.

Stuff the Jalapenos
Using a small spoon or a piping bag, fill each jalapeno half with the cream cheese mixture, packing it in generously.
Coating the Jalapenos

Prepare the Coating
In one bowl, place the flour. In another bowl, beat the eggs. In a third bowl, mix the bread crumbs with red and green chili flakes. Dip each stuffed jalapeno first in the flour, then in the egg, and finally coat with the bread crumb mixture.

Fry the Jalapenos
In a large skillet, heat vegetable oil over medium-high heat. Once hot, carefully add the coated jalapenos and fry until golden brown, about 3-4 minutes per side. Remove and place on paper towels to drain.
