Method

Crust Preparation

  1. 1

    Make the crust

Preheat your oven to 350°F (175°C). In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Mix until the crumbs are evenly coated.

  2. 2

    Form the crust

Press the crumb mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in the preheated oven for about 10 minutes, then remove and let cool.

Filling Preparation

  1. 3

    Prepare the filling

In a large mixing bowl, beat the softened cream cheese with an electric mixer on medium speed until smooth and creamy. Gradually add in granulated sugar and mix until well combined.

  2. 4

    Add sour cream and vanilla

Add sour cream and vanilla extract to the cream cheese mixture. Mix until fully incorporated.

  3. 5

    Incorporate eggs

Add eggs one at a time, mixing on low speed after each addition until just combined. Be careful not to overmix.

  4. 6

    Add flour

Gently fold in the all-purpose flour until just combined. The mixture should be smooth and creamy.

Baking

  1. 7

    Combine and bake

Pour the cheesecake filling into the cooled crust. Bake in the preheated oven for 55-60 minutes, or until the edges are set and the center is slightly jiggly.

  2. 8

    Cool the cheesecake

Turn off the oven and crack the door open. Let the cheesecake cool in the oven for 1 hour. Then, remove from the oven and refrigerate for at least 4 hours, or overnight for best results.

Serving

  1. 9

    Serve the cheesecake

Once chilled, remove the cheesecake from the springform pan. Top with fresh berries and a dusting of powdered sugar if desired. Slice and serve.
