Crust Preparation

  1. 1

    Preheat Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Crust Ingredients

In a mixing bowl, combine graham cracker crumbs, sugar, and melted butter until well mixed and crumbly.

  3. 3

    Shape Crust

Press the mixture firmly into the bottom and up the sides of a 9-inch pie plate.

  4. 4

    Bake Crust

Bake the crust in the preheated oven for 8-10 minutes or until lightly golden. Remove from oven and let cool.

Filling Preparation

  1. 5

    Combine Filling Ingredients

In a separate mixing bowl, whisk together sweetened condensed milk, fresh lemon juice, lemon zest, and egg yolks until smooth and well combined.

  2. 6

    Fill Crust

Pour the lemon filling into the cooled graham cracker crust, spreading it evenly.

  3. 7

    Bake Filling

Return the pie to the oven and bake for an additional 15 minutes until the filling is set but still slightly jiggly in the center.

  4. 8

    Cool Pie

Remove the pie from the oven and let it cool at room temperature for at least 30 minutes before refrigerating for at least 2 hours to set completely.

Topping Preparation

  1. 9

    Whip Cream

In a chilled mixing bowl, beat the heavy whipping cream until soft peaks form.

  2. 10

    Add Sugar

Gradually add powdered sugar while continuing to beat until stiff peaks form.

  3. 11

    Top Pie

Spread the whipped cream over the cooled lemon filling. Garnish with additional lemon zest.
