Prepare Jalapenos
Wash the jalapeno peppers thoroughly. Slice them into 1/4-inch thick rounds, discarding the stem ends. If you prefer less heat, remove the seeds and membranes.

Set Up Breading Station
In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and buttermilk until well combined. In a third bowl, combine cornmeal, salt, black pepper, garlic powder, and onion powder.

Heat Oil
In a large skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

Fry the Jalapeno Coins
Carefully add the breaded jalapeno coins to the hot oil in batches. Fry for about 2-3 minutes per side or until they are golden brown and crispy. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.
