    Prepare Jalapenos

    Wash the jalapeno peppers thoroughly. Slice them into 1/4-inch thick rounds, discarding the stem ends. If you prefer less heat, remove the seeds and membranes.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and buttermilk until well combined. In a third bowl, combine cornmeal, salt, black pepper, garlic powder, and onion powder.

Frying

    Heat Oil

    In a large skillet or frying pan, heat the oil over medium-high heat until it reaches 350°F (175°C).

    Bread the Jalapeno Coins

    Take each jalapeno slice, first dip it into the flour, shaking off excess, then into the egg mixture, and finally coat it with the cornmeal mixture. Make sure each slice is evenly coated.

    Fry the Jalapeno Coins

    Carefully add the breaded jalapeno coins to the hot oil in batches. Fry for about 2-3 minutes per side or until they are golden brown and crispy. Use a slotted spoon to remove them and place on a paper towel-lined plate to drain excess oil.
