Method

Pot Roast Preparation

    Sear the Roast

    Season the chuck roast with salt and black pepper. In a large pot, heat olive oil over medium-high heat. Sear the roast on all sides until browned, about 3-4 minutes per side.

    Add Vegetables and Broth

    Remove the roast from the pot and set aside. Add chopped onion, minced garlic, carrots, and celery to the pot. Sauté until softened, about 5 minutes. Return the roast to the pot and add beef broth, bay leaves, and thyme.

    Cook the Roast

    Bring the mixture to a boil, then reduce the heat to low. Cover and let simmer for 3-4 hours until the roast is tender and shreds easily with a fork.

Whipped Mashed Potatoes Preparation

    Boil Potatoes

    In a large pot, add the cubed potatoes and cover with water. Bring to a boil over high heat. Cook until the potatoes are tender, about 15-20 minutes. Drain well.

    Mash Potatoes

    In the same pot, add butter, milk, salt, and pepper to the drained potatoes. Mash until smooth and creamy.

Brown Gravy Preparation

    Make Roux

    In a saucepan, melt butter over medium heat. Whisk in flour and cook for 1-2 minutes until lightly golden.

    Add Broth and Thicken

    Gradually whisk in the beef broth. Cook, stirring constantly, until the gravy thickens, about 5-7 minutes. Season with salt and black pepper to taste.

Assembly

    Prepare the Sandwich

    Slice the pot roast and layer it on sandwich rolls. Top with whipped mashed potatoes and drizzle with brown gravy.

    Serve

    Serve the hot beef sandwich with extra gravy on the side.
