Chili Preparation

    Sauté Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté for about 3-4 minutes until the onions become translucent.

    Add Bell Pepper

    Stir in the chopped bell pepper and cook for an additional 2-3 minutes until softened.

    Cook Meat

    Add the ground beef or turkey to the pot. Cook, breaking it apart with a spoon, until browned (about 5-7 minutes).

    Add Remaining Ingredients

    Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, black pepper, and water. Mix well to combine.

    Simmer

    Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for 25-30 minutes, stirring occasionally.

Serving

    Prepare Toppings

    While the chili simmers, prepare your toppings by shredding the cheddar cheese, slicing green onions, and measuring out the sour cream.

    Ladle the hot chili into cups or bowls. Top each serving with shredded cheddar cheese, sliced green onions, and a dollop of sour cream.
