Add Bell Pepper
Stir in the chopped bell pepper and cook for an additional 2-3 minutes until softened.

Add the ground beef or turkey to the pot. Cook, breaking it apart with a spoon, until browned (about 5-7 minutes).

Stir in the diced tomatoes, kidney beans, chili powder, cumin, salt, black pepper, and water. Mix well to combine.

Bring the mixture to a boil, then reduce heat to low and let it simmer uncovered for 25-30 minutes, stirring occasionally.

While the chili simmers, prepare your toppings by shredding the cheddar cheese, slicing green onions, and measuring out the sour cream.
