Method

Cooking the Chili

  1. 1

    Prepare Ingredients

Chop the onion, garlic, and bell pepper into small pieces. Rinse the kidney and black beans under cold water.

  2. 2

    Cook Meat

In a large pot, heat the olive oil over medium heat. Add the ground beef and cook until browned, breaking it up with a spoon, about 5-7 minutes.

  3. 3

    Add Vegetables

Stir in the chopped onion, garlic, and bell pepper. Cook for another 3-4 minutes until the vegetables are softened.

  4. 4

    Add Spices and Tomatoes

Mix in the chili powder, cumin, salt, and black pepper. Then add the diced tomatoes and tomato sauce, stirring to combine.

  5. 5

    Incorporate Beans

Add the rinsed kidney beans and black beans to the pot. Stir well.

  6. 6

    Simmer

Bring the mixture to a simmer. Reduce the heat to low, cover, and let it cook for 30-40 minutes, stirring occasionally.

Serving

  1. 7

    Prepare Toppings

While the chili is simmering, chop the green onions. Grate the cheddar cheese.

  2. 8

    Serve

Once the chili is ready, ladle it into bowls. Top with cheddar cheese, a dollop of sour cream, and sprinkle with chopped green onions.
