Prepare the Batter
In a mixing bowl, combine the all-purpose flour, cornstarch, baking powder, salt, and black pepper. Gradually add cold water while whisking until the batter is smooth and thick.

Heat the Oil
In a large pot or deep frying pan, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

Batter and Fry the Haddock
Dip each haddock loin into the batter, ensuring it's fully coated. Carefully place the battered fish into the hot oil and fry for about 4-5 minutes on each side or until golden brown and crispy. Use a slotted spoon to remove the haddock from the oil and drain on paper towels.

Assemble the Sandwich
On the bottom half of each grilled French roll, place 2 lettuce leaves. Add a piece of the fried haddock on top of the lettuce, followed by a slice of tomato (sliced from the large tomato). Finally, generously spread tartar sauce over the haddock and place the top half of the roll on the sandwich.

Serve
Serve immediately while hot, alongside any extra tartar sauce if desired.
