Method

Preparation of Salmon

    Marinate the Salmon

    In a bowl, combine olive oil, lemon juice, minced garlic (finely chopped), Dijon mustard, fresh dill, salt, and black pepper to create a marinade.

    Coat the Salmon

    Place the salmon fillets in the marinade and ensure they are well coated. Let them marinate for at least 30 minutes in the refrigerator.

Grilling the Salmon

    Preheat the Grill

    Preheat your grill to medium-high heat.

    Grill the Salmon

    Remove the salmon from the marinade and place on the grill. Grill for about 6-8 minutes per side or until the fish is cooked through and flakes easily with a fork.

Preparation of Seasonal Vegetables

    Prepare the Vegetables

    Wash and slice the zucchini and bell peppers into strips. Trim the tough ends off the asparagus.

    In a large bowl, toss the prepared vegetables with olive oil, salt, and black pepper.

Grilling the Vegetables

    Place the seasoned vegetables on the grill after the salmon has been cooking for about 5 minutes. Grill for about 4-5 minutes, turning occasionally, until tender and slightly charred.

    Once both the salmon and vegetables are grilled, remove them from the grill and let them rest for a few minutes. Serve the grilled salmon with a generous portion of seasonal vegetables on the side.
