Cook the Bacon
In a skillet over medium heat, cook the applewood smoked bacon until crispy, about 4-5 minutes per side. Remove and drain on paper towels.

Slice the Tomato
While the bacon is cooking, slice the large fresh tomato into thin slices.

Prepare the Bread
Spread 1 tablespoon of unsalted butter on one side of each slice of sourdough bread.

Build the Sandwich
Place two slices of sourdough bread butter-side down in a skillet over medium heat. Layer with two slices of American cheese, followed by the crispy bacon, and then the tomato slices. Top with the remaining two slices of American cheese and the other slices of sourdough bread, butter-side up.

Grill the Sandwich
Cook the sandwich for about 3-4 minutes until the bottom is golden brown. Carefully flip the sandwich and cook for an additional 3-4 minutes, until the cheese is melted and the other side is golden brown.

Remove the sandwich from the skillet, slice it in half, and serve hot with your favorite dipping sauce or side.
