Method

Preparing the Roast

    Season the Roast

    Preheat your oven to 300°F (150°C). Rub the beef roast with salt, black pepper, garlic powder, and onion powder evenly on all sides.

    Roast the Beef

    Place the seasoned roast in a roasting pan and cook in the preheated oven for about 3 hours, or until the internal temperature reaches 135°F (57°C) for medium-rare. Remove from oven and let it rest for 15 minutes before slicing.

Making the Au Jus

    Prepare the Broth

    In a medium saucepan, combine beef broth, soy sauce, Worcestershire sauce, minced garlic cloves, and thyme. Bring to a simmer over medium heat.

    Simmer the Au Jus

    Let the mixture simmer gently for about 15 minutes, allowing the flavors to meld. Adjust seasoning to taste and keep warm.

Assembling the Sandwich

    Slice the Roast

    Once the roast has rested, slice it thinly against the grain.

    Prepare the Rolls

    Slice the French rolls in half and lightly grill or toast them until golden.

    Add the Meat and Cheese

    Layer the sliced roast beef generously onto the bottom half of each roll. Top with provolone cheese slices.

    Melt the Cheese

    Place the sandwiches under a broiler for a couple of minutes until the cheese is melted and bubbly.

    Serve with Au Jus

    Serve the sandwiches immediately with a small bowl of warm au jus for dipping.
