For the Battered Fish

Prepare the Batter
In a large bowl, whisk together the all-purpose flour, cornstarch, baking powder, and salt. Gradually add the cold sparkling water, whisking until the batter is smooth and free of lumps. Let it rest for about 15 minutes.

Heat the Oil
In a large pot or deep fryer, heat the oil over medium-high heat until it reaches 350°F (175°C).

Batter the Fish
Dip each fish fillet into the batter, ensuring it is fully coated.

Fry the Fish
Carefully place the battered fish fillets into the hot oil, frying in batches if necessary. Fry for about 4-5 minutes, or until the batter is golden brown and the fish is cooked through. Remove the fish and drain on paper towels.

Prepare the Potatoes
Peel the russet potatoes and cut them into thick fries. Rinse them in cold water to remove excess starch and pat them dry with a kitchen towel.

In a small bowl, combine the mayonnaise, finely chopped dill pickles, capers, lemon juice, and fresh dill. Mix well until all ingredients are well incorporated.

Taste the tartar sauce and add salt to taste, mixing well. Refrigerate until ready to serve.
