Preparing the Cake
- 1
Melt Chocolate and Butter
Preheat your oven to 425°F (220°C). In a heatproof bowl, combine the semi-sweet chocolate and unsalted butter. Melt them together over a double boiler or in the microwave, stirring until smooth. Set aside to cool slightly.
- 2
Mix Eggs and Sugar
In a large mixing bowl, whisk together the eggs, egg yolks, and granulated sugar until the mixture becomes thick and pale in color.
- 3
- 4
Add Flour
Sift the all-purpose flour over the chocolate mixture and fold gently until just combined. Be careful not to overmix.
- 5
- 6
Fill Ramekins
Evenly distribute the batter among the prepared ramekins, filling each about 3/4 full.
- 7
Bake
Place the ramekins on a baking sheet and bake in the preheated oven for 12-14 minutes, until the edges are firm but the center remains soft.
- 8
Cool Slightly
Remove the cakes from the oven and let them cool for 1 minute before inverting onto plates.
