For the Chicken Fried Steak

Prepare the Steaks
Season the cubed steaks on both sides with salt and black pepper.

Breading Process
In a bowl, whisk together the buttermilk and eggs. In another bowl, place the flour. Dip each cubed steak first in the flour, then the buttermilk mixture, and then back in the flour to coat thoroughly.

Fry the Steaks
In a large skillet, heat the vegetable oil over medium-high heat. Once hot, carefully place the breaded steaks in the skillet. Fry for about 3-4 minutes on each side or until golden brown. Remove and drain on paper towels.

Cook the Sausage
In a skillet over medium heat, crumble the breakfast sausage and cook until browned. Drain excess grease if needed.

Make the Gravy
Sprinkle the flour over the cooked sausage and stir well. Gradually pour in the milk, stirring constantly until the mixture thickens. Add black pepper and salt to taste.
