Preparation of Tater Tots

    Cook the Tater Tots

    Preheat your oven according to the package instructions for the tater tots. Spread the tater tots in a single layer on a baking sheet and bake for 20-25 minutes or until they are golden and crispy. Stir halfway through for even cooking.

Making the Sausage Gravy

    Cook the Sausage

    In a large skillet over medium heat, crumble the ground breakfast sausage and cook until browned and fully cooked (about 5-7 minutes). Drain excess grease if necessary.

    Make the Roux

    Sprinkle the flour over the cooked sausage and stir to coat. Cook for about 1-2 minutes to eliminate the raw flour taste.

    Add Milk

    Gradually pour in the milk while stirring constantly to prevent lumps. Bring the mixture to a simmer and cook for 3-4 minutes until it thickens.

    Season the Gravy

    Add black pepper, salt, and red pepper flakes to taste. Stir to combine and remove from heat.

Cooking the Eggs

    In a separate pan, cook the eggs to your preference (fried, poached, or scrambled). For fried eggs, heat a small amount of oil or butter over medium heat, crack the eggs in, and cook for about 2-3 minutes until the whites are set but the yolks are still runny.
