    Prepare the Polenta

    In a large pot, bring 4 cups of water to a boil. Stir in the cornmeal slowly to prevent lumps from forming.

    Cook the Polenta

    Reduce the heat to low and stir in salt and jalapeño. Cook for about 30 minutes, stirring frequently until thickened.

    Finish the Polenta

    Remove from heat and stir in butter and grated Parmesan cheese until melted and well combined. Set aside.

Shrimp

    Marinate the Shrimp

    In a bowl, combine olive oil, minced garlic, salt, black pepper, and lemon juice. Add the shrimp and toss to coat. Let marinate for at least 15 minutes.

    Grill the Shrimp

    Preheat a wood grill. Skewer the shrimp and grill for 2-3 minutes on each side until pink and cooked through.

BBQ Sauce

    Combine Sauce Ingredients

    In a saucepan, combine Abita beer, ketchup, brown sugar, Worcestershire sauce, smoked paprika, salt, and black pepper.

    Cook the Sauce

    Simmer the mixture over medium heat for about 15-20 minutes, stirring occasionally until thickened.

Crispy Duck Bone

    Prepare the Duck Bones

    Preheat oven to 400°F (200°C). Rub the duck bones with olive oil, salt, and black pepper.

    Roast the Bones

    Place the bones on a baking sheet and roast in the oven for 25-30 minutes until crispy.
