Smashed Mignon Potatoes

Grilled Asparagus

Method

Filet Mignon

  1. 1

    Prepare the Filet

Remove the filet from the refrigerator and let it sit at room temperature for 30 minutes before cooking.

  2. 2

    Season the Filet

Rub the filet with olive oil, salt, black pepper, and fresh rosemary on both sides.

  3. 3

    Grill the Filet

Preheat the grill to medium-high heat. Grill the filet for 4-5 minutes on each side for medium-rare or until the desired doneness is reached.

  4. 4

    Rest the Filet

Remove the filet from the grill and let it rest for 5 minutes before slicing.

Smashed Mignon Potatoes

  1. 5

    Boil the Potatoes

In a large pot, bring salted water to a boil. Add the Yukon Gold potatoes and cook until tender, about 15-20 minutes.

  2. 6

    Mash the Potatoes

Drain the potatoes and return them to the pot. Add butter, heavy cream, salt, black pepper, and garlic powder. Use a potato masher to smash until desired consistency is reached.

Grilled Asparagus

  1. 7

    Prepare the Asparagus

Trim the woody ends off the asparagus and rinse under cold water.

  2. 8

    Season the Asparagus

In a bowl, toss the asparagus with olive oil, salt, and black pepper until evenly coated.

  3. 9

    Grill the Asparagus

Preheat the grill to medium heat. Grill the asparagus for about 5-7 minutes, turning occasionally until tender and slightly charred.
