    Prepare Ingredients

    Dice the smoked duck breast and slice the andouille sausage into rounds. Mince the garlic and chop the onion, bell pepper, and celery (the holy trinity of Cajun cooking).

Cooking

    Make the Roux

    In a large pot, heat the vegetable oil over medium heat. Stir in the flour and cook, stirring constantly, until the roux turns a deep brown color, about 15-20 minutes.

    Sauté Vegetables

    Add the onion, bell pepper, and celery to the roux and sauté for about 5-7 minutes until slightly softened. Add the minced garlic and cook for an additional minute.

    Add Meats

    Stir in the diced smoked duck and sliced andouille sausage, cooking for another 5 minutes until the meats are heated through.

    Add Liquids and Spices

    Pour in the chicken stock and diced tomatoes, followed by Worcestershire sauce, bay leaves, thyme, cayenne pepper, salt, and black pepper. Stir to combine.

    Simmer

    Bring the gumbo to a gentle boil, then reduce heat to low. Cover and simmer for at least 45 minutes, stirring occasionally.

    Serve

    Remove bay leaves before serving. Ladle the gumbo into bowls and garnish with chopped green onions. Serve with slices of Langlinais French bread.
